The 67 is the paint code, the U means "upper", as in the paint on the top parts of a truck with two-tone paint. If you had two-tone paint, the bottom colour would have a L for lower, as in 67L. Most of the GM computer codes require 3 characters, so when a vehicle is one colour, the colour code uses the U to provide the 3 character requirement.
Most gm paints get re-used, from year to year (the 41 black has been used for years), but they will change the name (keep the number, change the name) most years. The names even get changed from one line to an other, Chev may use the same paint # as Pontiac, but the name will/may be different.
