E fan Question

Ok here is my story/question. My car went into the shop for an install of transmission, headers, tranny cooler, and Efans. The Tranny and headers are in but due to a personal problem my mechanic won't be able to finish the install at the same time. My question is now that I sent my pcm to Vector for the efan upgrade will my mechanical fan still work. I don't see why it wouldn't but just want to be sure. I am supposed to pick the car up tomorrow or friday and asking this question now so I can find an alternate mode of transport if it won't work. Another question is I read to put in a 160 degree thermostat with the fans, i have the thermostat and had pcm to kick on efans at 160. should i put the tstat in now or should I wait for the efan install. Please Help.
